Simple Recipe Steps for a Victoria Sponge

Ingredients

  • 200g unsalted butter, softened

  • 200g caster sugar

  • 4 large eggs

  • 200g self-raising flour

  • 1 tsp baking powder

  • 2 tbsp milk

  • Jam (strawberry or raspberry)

  • Whipped cream or buttercream (optional)

  • Icing sugar (for dusting)

Instructions

  1. Preheat your oven to 180°C (350°F) and grease two 20cm (8 inch) round cake tins.

  2. In a large mixing bowl, cream together the softened butter and caster sugar until light and fluffy.

  3. Add the eggs, one at a time, mixing well after each addition.

  4. Sift in the self-raising flour and baking powder, then fold into the mixture gently.

  5. Add the milk and mix until the batter is smooth and well combined.

  6. Divide the batter evenly between the prepared cake tins.

  7. Bake in the preheated oven for 20-25 minutes, or until a skewer inserted into the center comes out clean.

  8. Once baked, let the cakes cool in the tins for 10 minutes before transferring to a wire rack to cool completely.

  9. Once cool, spread a layer of jam on top of one cake and add whipped cream or buttercream if desired.

  10. Place the second cake on top and dust with icing sugar before serving.
